The project aims to research the consumption-side potential of local legumes, the resulting environmental impact, and to develop strategies that are compatible with existing nutritional practices which could ultimately lead to a reduction in environmental pollution. As part of the project, the following aspects of promoting a legume-rich diet will be addressed in a target group-orientated manner:
- Identification of target group-specific drivers and barriers to legume consumption,
- Reduction of target group-specific consumption barriers,
- Strengthening the everyday practicability of a legume-rich diet,
- Measures to increase the willingness to try and enable consumption experiences,
- Utilisation of sensory potentials,
- Improving the level of knowledge about the environmental impact of legumes,
- Developing effective marketing strategies and innovative approaches for target group-specific consumer communication.
The StrahL project focuses in particular on increasing legume consumption at home, with possible spill-overs to out-of-home consumption. The project results in specific findings for food companies, the food trade, nutritional counselling, political decision-makers and end consumers.
