ZERN = Zukunft der Ernährung in Niedersachsen
ZERN is a research network of the University of Göttingen, the University of Veterinary Medicine Hannover and the German Institute of Food Technologies (DIL) in Quakenbrück, which aims to support the transformation of the agricultural and food system in Lower Saxony, which is under increasing pressure to adapt. Aspects such as animal welfare and sustainability must be given greater consideration in agricultural production in the future. The findings from the research network should enable the sustainable production, processing and marketing of food.

While the main focus of reformulation in Germany today is on reducing the sugar, fat and salt content of foods, ProBallast is directly aimed at increasing the use of healthy ingredients. It is also testing the use of by-products from the food industry to help reduce food waste and up-cycling.

The Food-PlanetH project aims to contribute to the creation of food environments that are supportive of healthy and sustainable diets, defined as diets that maximize human health and well-being while minimizing the food system’s environmental footprint. Our goal is to make healthy and sustainable food choices available, accessible, attractive, and affordable for all.

The large number of nutrition-related diseases has fuelled the debate in recent years, both globally and in Germany, about stronger political regulation of the food supply. In addition to issues such as labelling and incentive taxes, the reformulation of product recipes has gained relevance, prompted by initiatives from the European Union. Reformulation strategies aim to optimise the nutritional composition of processed foods. Nutri-Score will make it easier for consumers to see the nutritional properties of a food at a glance and to compare different products within a product group in terms of their nutritional value. For the positive development of the organic market in Germany intended by the BÖLN call for proposals, it is of considerable importance that the health image of organic products among consumers is further consolidated and expanded. It therefore seems sensible for the organic sector to (1) develop its own reformulation strategy and (2) test it in an exemplary manner. These two overarching goals were the subject of the ReformBIO research project.

The food industry is one of the most important economic sectors in Lower Saxony. The future performance and competitiveness of the industry also depends on the extent to which it succeeds in making production environmentally friendly and taking a pioneering position in the competitive arena. The project therefore aimed to develop a scientifically sound framework concept for a climate label and to test its practical suitability for the agricultural and food industry in Lower Saxony.

The aim of this project was to develop tomato varieties that are ideally suited to sustainable, regional and urban cultivation. The focus is on improving the taste of the tomato. The project was jointly acquired by the University of Göttingen and Osnabrück University of Applied Sciences and was coordinated by Prof. Elke Pawelzik, Chair of Plant Product Quality at the University of Göttingen.
