Dr. Brianne Altmann

Brianne is a post-doctoral researcher in the project “Alternatives for Adding Value for Crangon crangon.” Brianne studied Human Dimensions of Environmental Management and Indigenous Studies at the University of Alberta, Edmonton, Canada, as well as Sustainable International Agriculture at the University of Goettingen and University of Kassel, Germany. She completed her doctoral thesis in 2019 on the topic of meat quality outcomes and consumer acceptance of alternative protein feeds in animal production. Her expertise includes: meat physico-chemical properties, descriptive sensory analysis, participatory research, consumer surveys, discrete choice experiments.
Brianne’s research focuses on the human dimensions of sustainable animal production. She often evaluates intrinsic food system attributes, such as product quality, to further investigate human decision and management factors influencing our food systems. She is particularly interested in alternative and unconventional animal products, and the associated producer and consumer perceptions and preferences, as well as food system equity and sustainability.
